Civitella Marittima is a medieval hill village in the municipality of Civitella Paganico, province of Grosseto, along the route that links the Maremma to Siena. Stone alleyways, an ancient parish church and woods all around: this is the middle Tuscan countryside, the convenient kind — the Siena-Grosseto dual carriageway is minutes away — yet still quiet.

Cooking on the border between the Maremma and the Siena hills: pici, tortelli, wild boar, acquacotta, pecorino and cured meats. And in nearby Pari, in August, the long-standing Sagra della Salsiccia; in Paganico, the curious Sagra della Granocchia.

Wine and olive oil

The municipality of Civitella Paganico falls within the production area of Montecucco DOC and Montecucco Sangiovese DOCG, the denomination that borders on Brunello di Montalcino: hillside Sangiovese, deep and true to its ground. The local olive groves produce Toscano IGP extra virgin olive oil.

Festivals

Summer in the municipality is full of hamlet festivals — Pari, Paganico, Casale di Pari — where people eat at long tables under the stars. And the Petriolo hot springs, on the river Farma, are a free, year-round pleasure.
