At the table
The cooking of Pitigliano tells two stories: the Maremma one of acquacotta, pici and wild boar, and the Jewish one of the "sfratto", the walnut and honey pastry that has become the symbol of the town. In the osterie of the centre you eat between walls of tufa, with pecorino, cured meats and oil from the surrounding hills.


Wine and olive oil
Pitigliano gives its name to one of Tuscany's historic white denominations, Bianco di Pitigliano, born from the vines that surround the crag. The cellars are often caves dug into the tufa, cool and deep, and can still be visited today. From the same hills comes an intense, fragrant extra virgin olive oil.
Festivals
The most striking event is the Torciata di San Giuseppe, in March: a procession of torches crosses the sunken road and a great bonfire salutes the end of winter. In September the tufa cellars open for Settembre DiVino, with tastings and music in the alleyways.
